caramel-walnut upsidedown banana cake

I really enjoyed these cakes. The banana bread portion was really moist and the topping was sweet and yummy. A nice twist on the traditional, and great for fall. The recipe is for one large cake, but I only wanted half, so I made 6 cupcake sized ones instead.

Awww! I'm sorry! What about turning it into an apple cake? I imagine you could use a combination of applesauce, and chopped up apples. Actually that sounds good... I may even try it myself! Or you could just maybe use the food processor and chop up the apples that way to make your own sauce. Hmm.. possibilities! I do know that applesauce adds a lot of moisture to baked goods (some sub. butter for it) but I think adding some chopped/processed apples would give additional the bulk that the bananas would add?

I try to pretend they're breakfast.. cause.. you know, there's fruit in it. ;) They're especially good when still warm, although the caramel gets a bit messy. A spoon can take care of that, though!
