Turkey Roaster Suggestions?

You want to keep the turkey off the bottom of the pan and out of the drippings, cuz it can get pretty gross. You don't need a roasting rack though - what I do is criss-cross carrots and celery like a tic tac toe board, and then use quartered onions in the spots in between. This keeps the turkey afloat and also makes the best gravy ever. And really, a roasting pan isn't high-tech - if you want to get a real one and not just use a disposable one, any one from the grocery store will likely do. Keep in mind that they're big and kind of hard to store, though.

So glad you asked this question. I always use the disposable, but never thought to use the celery and carrot trick. Definitely going to do that this year... with the onions...thanks everyone for those great ideas! Hope my grave is delish!
