Possibly a stupid question, but could you just cut the whole recipe by half? I don't think almond meal really works on its own as a replacement for flour - too much fat and it doesn't absorb liquids like other flours. Do you have any other flours around you could substitute, like rice?

Nope, no other flours around. I figured I'd ask and see if subbing would be ok, otherwise, yeah, cutting the whole thing in half seems like the best option.

Oh yeah, easily. I just figured I'd check and see if subbing would work. I was hoping to make a big enough batch that I could share with the neighbor I borrow my wifi from AND bring some to work tomorrow. Oh well!

Ooo, good idea. I do like mini cupcakes. Making a half batch with some big ones and some eensy ones could be super cute. Last time I made these sort they all got wolfed down by the folks at work, they're super damn tasty.

Cut the recipe in half instead. Half the cupcakes are better than no cupcakes from a messy substitution.

And if you make smaller cupcakes, then lean in, it'll be like there's just as many full-sized cupcakes!

And hey! Half the calories, too!

"lmond flour is good in "quick-bread" type recipes, like muffins, nut breads, and pancakes (see recipes below). It's not good for foods such as bread that require a real dough (you can't knead it). Usually, more eggs are required when baking with almond meal to provide more structure."
