I have a bag of potatoes that I need to use and I wanted to make a big potato salad but I'd like it to be a little different. What are some of the recipes you use and enjoy?

So I have a ten-pound bag of potatoes, kind of by accident.

Aside from making baked or mashed potatoes and latkes, what else can I do with them? Does anyone have any good potato recipes? The potatoes don't even have to be the main ingredient.
