Latkes

Happy Hanukkah!

This is the traditional Latke recipe that my grandmother passed on to me.

LATKES (potato pancakes)

Ingredients

* 5 potatoes shredded fine or 1 bag of hashbrowns (thawed)
    * 2 onions
    * 3 eggs
    * 2-4 Tbsp. all-purpose flour
    * 1 tsp. salt
    * 1/4 tsp. pepper
    * oil for frying (canola is recommended)

I know, I just informed the husband that tonight will be latkes and roasted chicken. Oh I should post the Hanukkah donut recipe too. Festival of Lights... and fried food.

Now my stomach is growling. That beats my grilled chicken with brown rice!

Fried food doesn't have any calories or fat grams during the holidays, right? =)

Cool! A friend of mine made latkes last year for Hanukkah, and they were delicious. I look forward to trying these.

you forgot to mention the onions needed to be shredded or chopped.

My husband hasn't ever had latkes and is a bit squeamish about the applesauce, but this is the first hanukkah i have made them for him so he'll warm to it after tomorrow. I also added some rosemary so i'll see how they come out. I'm making the "batter" tonight and frying them tomorrow. I also made cranberry orange muffins.
