Chocolate Margarita Cookies & Coconut Cream

This week I was inspired by the purchase of a fresh young coconut & cinco de mayo!

The cookies were originally supposed to have a nice dollop of coconut cream on top, but it just wasn't mousse-y enough. LOL They still taste awesome & the coconut mousse was rich and creamy.

Sing along now... "Put the lime in the coconut!"

as a person with iffy eyesight, i'm politely letting you know that the green you chose for the "limey sugar cookies" is barely readable, and the color for "coconut cream" was not readable at all till i highlighted it.

the size of the font, though, is wonderful. ;) and the cookies themselves look fabulous!

They go very well with coffee 'cause the ganache is so rich (and the cookies are about 235 calories each!)
