Does anyone have any good recipes for tofu noodles?

We did a demo at work with those exact noodles! The guy just used a simple marinade we had from another part of the store. I'd assume pretty much anything similar would work great.

Interesting, I've never heard of tofu noodles. Those allergies sound wicked. How do you survive? Do you just eat pretty much all fruits and vegetables?

Fruits and vegies, yes. But i also eat a lot of crackers, mooncakes (the love of my life! *glomps icon*) cereal, and tofu noodles. Those items take the place of meats and grains in my diet. I also take a lot of supliments and vitamins.

FYI - The OP should be able to replace Eggbeaters with tapioca flour and water as a substitute. Recipe sound good.

Caprese Pasta Salad - Basil and Tomato Salad

INGREDIENTS:
1 package shirataki noodles (or other pasta) - this makes about 3 servings
1 cup chopped basil
1 medium tomato, chopped
3 oz mozerella cheese, cut into small cubes (Sub soy cheese)
1 Tablespoon capers
1 Tablespoon extra-virgin olive oil
PREPARATION:
Rinse shirataki noodles well in hot water, or prepare other pasta. Leaving the noodles hot when combining with the other ingredients helps to blend the flavors a bit. I also like to cut the shirataki noodles into manageble lengths using kitchen shears. Toss all ingredients together.
