Shirataki noodles are great in hotpot, soups and broth as they hold up for a long time and don't fall apart like normal wheat pasta. Same goes for arrowroot starch noodles (kuzukiri), and Malony noodles (made from potato and corn starch). I packed sukiyaki for lunch one day (a natural choice), using these kinds of durable noodles.
