What are your Easter menus?

My husband eats fish but no meat; I eat meat but no fish. I'm having a hard time deciding what to cook for Easter (it's just going to be the two of us), and would love to see what all of you are doing for inspiration. :)

Were going Italian this year with lasagna and caprese salad.

You could do that or maybe Greek with something like Spanakopita or Moussaka.

Oh, that's fine! It's probable that I'll end up with at least one side or snack with meat in it, plus I just want to see what everyone's doing anyway. :) Those sound so neat! I love goat cheese, asparagus, and prosciutto, so I'll probably end up making them sometime.

If you can still find it, roasted squash with a bit of butter & nutmeg is always good. Pair it with a casserole of vegetables and beans, and you've got a pretty colorful meal.

Squash is available year-round here, I think because a lot of it is produced locally and it keeps so well? It's more expensive this time of year than it is in the fall and early winter, but I love squash so much that it's worth it. :)
