Recipes that make good leftovers

Will you share your favorite recipe that is good as leftovers? My husband works nights until 3-4 am and so I make his dinner during the day and he reheats it when he gets home.

A little late in the year for it and a little complicated (I don't know how much time you have on your hands.) but I found this was delicious re-heated and ehhhh when I first made it fresh.

Pasta bake & casseroles in general I actually prefer reheated. Fried rice. Au gratin potatoes (either with meat on the side or ham chunks baked in, that's how I like it)

Pasta and soups are so yummy leftover but one can only eat so much pasta! I made ribs in the crockpot overnight and reheated them when I got home and they were YUMMY. I got country style ribs, salt & peppered them then seared them and plopped them in the crockpot with cut up onion and about 1/2 a bottle of Sweet Baby Rays, then put them on low for 7.5-8 hrs or so. I can't leave stuff in my crockpot while I'm at work because my work schedule is unpredictable at times so I throw stuff in at like 11pm and take it out and put it in the fridge and I've had some good luck with that. Carnitas, a whole chicken, pot roast, etc. you can eat your dinner when it's ready then pop the leftovers in the fridge for him :)

Beany things are a great sidedish that reheats well, whether they are New England style baked beans with molasses and mustard, black beans with onions and cumin, or black eyed peas.

So very much this. I love stuffed peppers, and they're great straight out of the pan hot, but the next day ... OMG.
