Does anyone have any recipes using tofu...but in such a way that it's not in noticeable chunks, or a focal point? Like, for someone who doesn't want to know they're eating it...

smoothies or in soups, blended.. mashed and stuffed into ravioli.. etc..

I have a recipe at home for a tofu pesto lasagna, which I've never actually made as a lasagna because I've never had lasagna noodles when I wanted it.

The abbreviated version: you take some tofu and mash it up with olive oil. Mix it with spinach and pesto, and put it over pasta. It tastes wonderful, and I'll bet it would be even more wonderful made as a lasagna as it was originally intended. If you're interested, I'll put the recipe up when I get home late tonight.

I have a recipe at home (will post for you later, if you'd like) for pumpkin pie made with tofu. Its blended in completely and gives it an incredible texture.

My dad (who is a 'meat & potatoes' type of guy) likes it better than regular pumpkin pie.

we had one of those recipes for thanksgiving one year and it was so terrible!! we all refused to finish it.... texture good, flavor bad....

if Not Eating Meat is the issue... then I'm not much help, but I'm partial to a kinda spicy, garlic chicken deal that is basically small pieces of chicken (uneven shapes, just chopped chicken cooked in a pan with some seasons and sauces...) and extending the "volume" of food by chopping up tofu to go in when the chicken is halfway cooked ( ... )

that sounds good....and no, not eating meat isn't really an issue...just trying tp be overall healthier. i'll definitely try that one!

as large chunks.... it seems to have a really bad rep., but tofu is one of those amazing foods that takes the flavor of whatever you cook it with..... it makes excellent steak type pieces if you glaze it with teriyaki, garlic sauce, or bbq sauce and then grill it over charcoal or on an electric grill. one thing that we also love at home is to pan fry it and then add a little bit of kc masterpiece honey mustard bbq sauce. i love the stuff personally and will even eat it raw just for that reason... it comes in lots of different type, silken (which is smooth and creamy), firm, which is a little more solid, and extra firm which has the texture of fresh mozarella. if you are substituting it for cheese, keep in mind that you will want to add a bit of sugar and a bit more salt probably. however, there are also tofus that are a little more interesting and add unique flavor and texture, most notably smoked tofu which has the texture of smoked mozarella and can be substituted for chopped chicken in almost anything (if you dont mind the ( ... )
