Does anyone have any recipes using tofu...but in such a way that it's not in noticeable chunks, or a focal point? Like, for someone who doesn't want to know they're eating it...

I have a recipe at home for a tofu pesto lasagna, which I've never actually made as a lasagna because I've never had lasagna noodles when I wanted it.

The abbreviated version: you take some tofu and mash it up with olive oil. Mix it with spinach and pesto, and put it over pasta. It tastes wonderful, and I'll bet it would be even more wonderful made as a lasagna as it was originally intended. If you're interested, I'll put the recipe up when I get home late tonight.

just be sure to doll it up with a little salt and maybe whatever kind of spices are handy.. i like lemon ricotta, so you could julienne and blanch some lemon rinds and mix it in..
