Does anyone have any recipes using tofu...but in such a way that it's not in noticeable chunks, or a focal point? Like, for someone who doesn't want to know they're eating it...

as large chunks.... it seems to have a really bad rep., but tofu is one of those amazing foods that takes the flavor of whatever you cook it with..... it makes excellent steak type pieces if you glaze it with teriyaki, garlic sauce, or bbq sauce and then grill it over charcoal or on an electric grill. one thing that we also love at home is to pan fry it and then add a little bit of kc masterpiece honey mustard bbq sauce. i love the stuff personally and will even eat it raw just for that reason... it comes in lots of different type, silken (which is smooth and creamy), firm, which is a little more solid, and extra firm which has the texture of fresh mozarella. if you are substituting it for cheese, keep in mind that you will want to add a bit of sugar and a bit more salt probably. however, there are also tofus that are a little more interesting and add unique flavor and texture, most notably smoked tofu which has the texture of smoked mozarella and can be substituted for chopped chicken in almost anything (if you dont mind the smoked flavor)

also there are some really really good meat substitute deli meats (with the texture of bologne) and hotdogs that are excellent and way healthier than the original meat version. they taste just like what they are supposed to... and morningstar farms makes something called breakfast patties that are GOOD with maple syrup on them...

there are a lot of options for healthier eating.... for example, buy leaner cuts of meat and trim things like chicken and turkey... if you need the extra fat for the texture of the dish, use olive oil or a little bit of butter instead. use lowfat milk, sourcream, yogurt, etc. fat free is nasty in many cases, but the lowfat options are almost as good for you. try to up your servings of fibrous vegetables and acidic vegetables and fruits, and lower your servings of things like bread, potatoes and pasta... a lot of pasta sauces are just as good over steamed broccoli, asparagus, or stuffed into peppers with crumbs and more veggies. more water is great to have instead of alcoholic beverages, and try to buy juice that is 100% juice instead of 25% juice and 75% water and sugar...

all good advice. i'm going to buy several forms of tofy and experiment a bit...:)
