I have mastered the art of vegetarian hot sandwiches, but I have found few cold sandwiches that I can take with me. Oh sure, theres pb and j. But I'm looking for something more savory. I like mock tuna made with chickpeas. I love tofu egg salad. But what is something simple and almost no cook I can throw in my bag before school ( Read more... )

any veggies stir-fried in a wrap with honey mustard.

There are some brands that make honey mustard without mayo. I have some in my fridge. :)

Not exactly a sandwich, but what about a burrito? I don't eat mine at all, and just put some beans, guac, corn and salsa on a tortilla or pita.
I'm not sure if this recipe is similar to the tuna one you have, but:http://vegweb.com/index.php?topic=12429.0 is delicious. I often change it up. Sometimes I'll add some curry powder, sometimes I'll add some grapes or raisins or something.

I've found avocado and mustard, with salt, pepper, and flax seeds (or seeds of your choosing) to be a delightful combination.
Adding even more veggies would be good, too, but this seems to be all I have on hand at the moment.

babaganoush is hummus-like, but different, for sometimes.

I really dig straight-up veggie sandwiches, carrot, cucumber, sprouts, avocado, zucchini, peppers, whatever you like, with some sort of mayo substitute and/or some mustard, maybe some spices, maybe some fake cheese if you like any of those. Yummy yummy yummy, crisp delicious summer food.

Oh! And fruit! Like peanut butter lightly on each slice of bread with some thinly-sliced apples or bananas, maybe even with some chopped nuts of other non-peanutty sorts (pecans come to mind, as do hazelnuts, but any nuts sound good) thrown on the pb. I haven't actually tried this with the chopped nuts, but the idea just came to me and it's making me really happy. I'm going to try it soon!

I bet if you took a vegetable peeler to an apple when making this sandwich, it would be yum-tastic. I kind of want one... on toast...

I like the skins, but I can see how that might improve the texture depending on tastes. I will try it both ways!

I like just a good old fashioned mix of sliced veggies (tomatoes, peppers, sprouts, cucumbers or whatever else you might want) between two slabs of bread.
