On "it's not until" vs "it isn't until" --> i'd actually vary it depending on what the phrase is for. I consider "it isn't until" to be much more formal. "it's not until" seems much more casual. i think it's because of the way it sounds if you were to say it in normal terms. although the use of the words casual and formal are slightly ...eh. If that makes any sense in the world. ...although, repeating the phrases to myself kinda makes me rethink that but whatever. that's my two cents.

hmm, okay, this is not articulate at all but, my thoughts on "it isn't until" versus "it's not until" is as follows:

it isn't over until he's defeated. <--- negation on IT.
it's not over until he's defeated. <--- negation on OVER.
