Has anyone tried doubling the basic chocolate or vanilla cupcakes from VCTOTW? Any trouble in doing so? I need to make about eight batches of each, and it would be awfully nice to cut that work in half. Since it's for a wedding, though, I can't afford to screw it up!

I've made my share of cupcakes and have VCTOTW, but I've never baked anything on this scale (120ish guests) nor of this importance. I'm making the wedding cake for my friends who are getting married in October... they're not vegan, but many of their guests (including myself) are. I was initially looking at traditional recipes but the bride has said she'd prefer it be vegan so everyone can enjoy it!
