The recipe is essentially my grandmother's, with earth balance (sticks, lots and lots of sticks... they bake better than the tubs) instead of dairy butter.

The trick is to really kneed them well. It takes a long, long time and really makes me wish that I had a mixer every time I make it! I have to give my wife credit though, she did all the kneading this time! Like with a lot of family recipes, it doesn't always translate perfectly into writing. These instructions are a little vague ;).

I am giving a 1/2 batch recipe below, because the full batch makes a huge amount. You should then press the dough into a parchment lined (for your sanity!) 8"x11" pan. It should be about 2cm (1") thick. Then you take a fork and you poke holes (in straight lines), about 1/8" apart for the entire thing. Sprinkle with some sugar and bake.

Ingredients

1 lb earth balance (which should be about 2 cups)
1 cups sugar
4 cups flour
1 cups cornstarch

Instructions

cream "butter" and sugar, add flour and cornstarch, gradually turn on to board. Knead very well. Spread onto cookie sheet, prick with fork and bake at 275 -300 deg F for 1 - 1.5 hours.

Ooh, you will also want to not over bake these. That cooking time is probably closer to about 1 hour, given that it is a 1/2 recipe. We kind of go by look now, but I usually set a timer for about 45 minutes and then just keep an eye on it (totally not helpful, I know, sorry!)
