Of the vegetarian protein sources, my favorite by far is seitan - also known as wheat gluten. What is one man's poison is another's source of sustanance and so it is with wheat gluten and me.

I have a weird digestive tract. Have for a number of years. Most of the time it's fine, but this year it really freaked out causing me a lot of pain and trouble. I just canned 6.5 pints of lemon-cherry marmalade. Oh yes, yes I did :) Actually, it's really a total of 6.75 pints, but I was -1 top, so the 4 oz jar will cool, get some saran wrap, and go right into the fridge. Breakfast, tomorrow!
