I would like to cook a side dish for a potluck we're attending tomorrow night. Anyone have suggestions/recipes for a simple tasty dish?

Had an awesome weekend with friends visiting for the holiday. We relaxed and gently bathed ourselves in the excesses of good food and booze. We have a wedding gift and pt's graduation gift that are now getting put to good use: a little Dom sipped out of Waterford crystal is a nice way to spend a Tuesday afternoon. =)

Considering the crappy weather, I think The Pub Ride went well. Didn't have the numbers I had hoped for due to busy schedules and the rain, but the core group had a ton of fun. I thank everyone who came out for any part of the night. I had a lot of fun and hope you did too.
