We haven't kept boxes of macaroni and cheese around the house forever. It's one of those things where if I get a craving, the stuff from the box just won't do. This, however, will.

I occasionally miss chunks of time. As in I was doing something and then ten minutes later I'm somewhere else doing another thing and I honestly am not entirely sure how I got from Point A to Point B. I cheated and used wonton wrappers for the ravioli. If you want to make your own ravioli from scratch, knock yourself out. I may try to make it myself someday, but at the moment time/energy is a factor, and I have to pick my culinary battles. That said, this turned out really well and everything else was made from scratch.

Tonight's dinner was the result of a few things.

First, pjack and I are adding more tofu to our diet. The reasoning is practical for us. Meat is expensive. We're both trying to cut back on fat without sacrificing protein. We both love the stuff when it's prepared properly.

( Prepared properly is a subjective phrase, but I think I did well tonight. )

As is often the case when the mother-in-law shares with us the bounty of her garden, we end up with way more veggies than we know how to use before they go bad. This time, the big score was tomatoes. This is what I've made from a dim memory of a watermelon salsa my Pampered Chef rep made at one of miladycarol's parties. Since pjack doesn't like watermelon, I've used mango instead.
