This is what I've made from a dim memory of a watermelon salsa my Pampered Chef rep made at one of
miladycarol's parties. Since
pjack doesn't like watermelon, I've used mango instead.
Mango Peach Salsa
2 mangoes, skinned and chopped
3 white peaches, skinned and chopped
1/2 sweet onion, chopped fine
1/2 c. cilantro, chopped fine
1-2 jalapeños, chopped fine
1 lemon, juiced
Mix up the fruit, onion, cilantro, and jalapeños with the lemon juice. Chill. Serve with tortilla chips.
Most of the work is in the chopping. I've got a cool thin-skin peeler that makes quick work of mangoes and peaches, plus a hand chopper that makes both salsa-sized cubes and fine cubes for the finely chopped stuff. I find with one jalapeño it has no kick at all. Next time I'll use two, maybe three. Since I caught myself nibbling on stray bits of jalapeño and going mmm, my tolerance for spice might be a factor here.
I love this recipe in summer. Cool, sweet, tasty.
