All right, it's recipe time again.

Baked Vegetable Pancake

If you've got a ton of vegetables you need to get rid of quickly, this will do the trick. These measurements are approximate because I wasn't measuring in cups so much as 'stuff that needs to go now' so don't get too hung up on precision here.

Ingredients:

8-10 c. shredded vegetables (I used carrots, potatoes, zucchini, and summer squash)
1 bell pepper, shredded
1 onion, minced
2 cloves of garlic, sliced thin
1 jalapeno, minced (optional, but awesome)
6 eggs
1/2 c. flour
3/4 c. milk (I used rice milk since the Mister is lactose intolerant)
Salt and pepper to taste

Instructions:

Preheat oven to 350F

In a large bowl, the shredded vegetables, pepper, onion, garlic, and jalapeno together.

In a smaller bowl, blend eggs, flour, and milk until they make a smooth batter. Salt and pepper to taste.

Lightly grease a casserole large enough to accommodate your vegetable mix and spread it out evenly within.

Pour the batter over the vegetable mix. Distribute it evenly.

Bake for about an hour, or until the batter is cooked through and the veggies are browning nicely on the top.

Let it cool a bit before you dig in.

Notes:

You're probably going to want a food processor or mandoline slicer for shredding your vegetables. I also used a hand blender for the batter. Viva la modern convenience.

The recipe makes about 8 servings.

You'll want to top it with something. I recommend a dash of Tabasco or a heaping spoonful of salsa verde. pjack said something about maple syrup, but that ain't right. It would probably be good with something sweet and sour, too. Whatever, go nuts.

You could top it with cheese before you put it in the oven if you're cooking for people who can eat the stuff.
