Cooking costs spoons. When I don't have enough, I pick the one thing I can do. When I'm low on spoons I usually don't have much of an appetite either, so it works out.
I'm going to show my ignorance here but what do you stuff zucchini with? Zucchini is one of those delightful foods I discovered as an adult because my parents never served it.
Nah, not ignorance... I never had stuffed zucchini before a few years ago.
Basically, it's the same stuff you'd stuff mushrooms with? Like bread crumbs, tomatoes, cheese? You could probably get more creative than that, too. Mom cuts them in half, hollows out the middle a bit (removing seeds, mostly) and puts in the filling, then bakes it for a bit. Vague, I know. I'm from the estimation school of cooking, rather than the "use an actual recipe" school. ;)
