Hello, a recipe and a variation

Hi I am new to this particular community. I LOVE food...I would be 400 pounds from eating if it wasn't for all the wonderful kitchen gadet stores. Anywhoo I thought that I would post a Pampered Chef recipe(a perk of being a consultant is you get free recipe books every now and again...plus the discount on kitchen toys) and a Variation on it that I use as a nice party snack.


The Pampered Chef's Elegant Artichoke Cups
Makes 24 Cups

1 tablespoon vegetable oil
24 square Wonton Wrappers
1 can (14oz.) artichoke hearts in water, drained and coarsely chopped
1/2 medium red bell pepper, diced
1/4 cup (1oz) grated fresh parmesan cheese
1 lemon
2 tablespoons finely chopped fresh parsley
1/2 cup (2oz) shredded mozzarella cheese
1/4 cup mayonnaise
1 garlic clove, pressed
Additional grated parmesan cheese

1. Preheat oven to 350 degrees

2. Lightly brush one side of Wonton Wrappers with oil and press one wrapper into each cup of a mini-muffin pan. Bake for 6 minutes or until edges of wontons are light golden brown. Remove to a cooling rack, leaving the wontons in the pan.

3. Zest lemon till you have 1/2 a teaspoon of lemon zest.

4. Combine Artichoke, Parmesan, Mozzarella, lemon zest, bell peper, parsley, Mayo and pressed garlic into a large bowl and mix well.

5. Fill each wonton Cup with about 1 tablespoon of artichoke mixture and sprinkle with additional parmesan cheese. Bake for 8 minutes or until edges of wonton are golden brown and cheese begins to melt. Remove from oven to cooling rack and remove wontons from pan. Serve
Immediatly.


Taco Cups - a variation on a pampered chef recipe
This will also serve 24

1 tablespoon vegetable oil
24 square wonton wrappers
2 lbs prepared taco meat (I use the Taco bell seasoning packets cause when I make this I get lazy)
1/2 pound shredded Cheese(again can be the pre-shredded from the dariy case)
Sour Cream
Lettuce
Tomato
Taco Sauce

The only real difference other than what you put in the wonton cups is that you cook the cups empty until they are golden brown on the edges and firm. The package should have suggested cooking times on it. Fill each cup with about 1 tablespoon of Taco meat. arrange Cheese, Sour cream, lettuce, tomato, Taco Sauce and any additional taco fixings in bowls around the meat filled wontons. Serve while still warm and enjoy.

I have made these taco cups for a few months now and they are yummy yummy. usually the first thing to go.
