Bananas foster, of course.
It is one of my favorite desserts, and I cooked up a batch for myself last night as a birthday present. I just made some vanilla icecream, and I couldn't think of a better way to enjoy it than with this.
The recipe I followed was from
this book, which I just recieved as a gift.
2 ripe bananas
2 tablespoons butter
1/3 cup lightly packed brown sugar
1/4 cup rum, brandy, or Cognac (the book also notes you can substitute orange juice. Has anyone ever tried that?)
1/8 teaspoon ground cinnamon
4 scoops vanilla icecream
1. Peel bannas and cut in half crosswise. slice each half lenighwise, then cut those peices in half lenghtwwise again.
2. Melt butter in a skillet over mediu-high heat. Add brown sugar, rum, and cinnamon; stir to mix well. cook until the mixture comes to a boil, then reduce heat and cook, stirring until the sauce begins to thicken.
3. Add the bananas and cook, stirring gently, until the bananas are heated through, 1 1/2 to 2 minutes
4. Remove the skillet from the heat. Serve warm bananas and sauce over sccops of icecream.
Even though I only used one banana, I still found that I need almost the full 1/3 cup of brown sugar; but then again, I like having extra syrup. Everything else, I sort of eyeballed half of, except the cinnamon, which I didn't have, and the icecream, because, c'mon, who is going to short change themselves on icecream?
