I made this recipe up yesterday, and ate about 2/3 of it for my lunch:
~ Several Tbsp. olive oil
~ 1 box frozen chopped spinach
~ about 1/2 cup leftover cooked quinoa
~ 1 small can (7.75 oz.z) chick peas
~ a handful of pine nuts
~shredded parmesan cheese
Put the oil and frozen spinach in a saute pan, cover, and heat on low. Stir every once in a while,
