So I'm looking to build a road case for catering/craft services.

Scope:
Comfortable working height top
Space for mini-fridge and microwave
Fits in both a van and most elevators
Casters that will roll well on carpet
"Lid" that becomes a table surface
Storage for things
Operates off a 15A circuit
Power available on top

I'm mostly concerned about being able to run this out of hotel rooms and convention areas.

Because I already have plans for fridge/microwave roadcase, so they go together in my mind.

Consider putting in a DC-AC adapter for people who want to run things at outside Fairs, or just live out of their car during the week and still want to prepare stock. Obviously there will be a limit to what can be run, but you should be able to operate a fair amount, even if it is just a light or two.

Ah. You might want to reconsider that. In my mind, Craft Table = Need for Storage. Storage which is being taken up by a microwave and fridge. Plus, they already make travel coolers that can run on AC/DC.

Except we specifically want a roadcase to carry our micro and fridge to go into hotel rooms and convention centers to use while we're at conventions. We're looking at specific use by ourselves mos likely.

Rabbit recoomends looking around at the sites to get the ideas and then designing it/building it yourself. Measuring the van it will be going into and measuring what a comfortable working height for the primary user is.. very helpful. Also measuring the appliances that are going into the case. microwaves and fridges can differ by quite a bit. figure out what the microwave will primarily be used for should help in sizing which model you need..if it's mostly coffe cups it can be a smaller model.

Oh, yes, I've been looking all over at the various options.

I figure I'll go for a standard 30" height, though that may not be possible, and it may be 32"-36".

I've got all the measurement of my tiny convention micro and my mini-fridge, which I was planning to build a roadcase for, but I think this will me a better thing.

As for the van, I can fit 4'x8' plywood in it, so I'm thinking I may shoot for 28"x32"x60" as the overall dimensions with a front lid that lifts off to become an additional table 32"x60" table.
