Re: the Vietnamese chicken with tamarind & sesame - this is the kind of recipe that you can definitely play around with. I didn't use Lebanese cucumber (which is a variety of cucumber), for example, I used long English cucumbers, so I don't see why you can't use whatever cucumbers you have handy, and similarly for the addition of vegetables. If you like how they taste, go for it! The tamarind & plum sauce can be used for all sorts of stir-fries and other dishes, not just this one, so if you make some, have fun with it! :)
I could totally go for gỏi cuốn! OMG, those look yummy! *points at your summer rolls* I think I have time during Thanksgiving holiday to make some...haha.
