My go to for advice is http://crockpot365.blogspot.com/ and she doesn't usually use soup just water or broth.

My favorite stew recipe:

a couple of pounds of stew meat (I get the butcher to cut up a very cheap roast into 1" cubes)
package of frozen vegetables - mixed vegetables, or some specifically for stew or soup, whatever you want
diced potato and/or carrot if you want
chopped onion, celery, pepper - to taste
can or two of stewed tomatoes or Ro-Tel tomatoes if you like it a little spicy
salt, pepper, garlic powder to taste

Sometimes I prepare anything that needs chopping the night before so that in the morning, it's just dump, quick stir, maybe add a little water depending on how much is in the pot, and turn it on. Very popular with family and at pot lucks!

My favorite go-to quick recipe is so easy and takes 5 minutes to assemble.

Crock pot Chili

1 lb ground beef (or turkey)
1 packet taco seasoning (I use low sodium variety)
I can (28 oz) diced tomatoes
1 small can corn, drained
1 can beans (black, pink, whatever you like), drained

Brown the beef and add the taco seasoning. Meanwhile, add the tomatoes, beans and corn to your crock. Drain the fat off the beef and add the meat to the crock, mix all ingredients together. Cook all day on low (6-8 hours -- my crock has a timer that switches to 'warm' after that).

So yummy, comfort food. I love to crumble tortilla chips and shredded cheddar on top. You can experiment, try a can of Rotel and a small can of plain tomatoes (14oz) if you like it spicier. Sometimes I've used salsa along w/a small can of tomatoes when I don't have the large ones on hand.

Hey! Just coming by with a fun tip. If you get some Hefty zipping storage bags (they are stronger than Ziplocks), you can pre-prepare several days' worth of crock meals ahead of time. You can cut veggies and meat and put in the bag, and then (depending on the recipe) you can add the sauce then or you can add the sauce the morning it goes into the crock. Makes it crazy easy - you can do a bunch on a Sunday and have a good portion of the week's cooking done ahead.
