I get a lot of my recipes from Allrecipes.com, they have an entire section just for slow cookers, and lots of the kind of recipes you're looking for. Hope that helps!
Go get yourself a cookbook on slow-cooking in a crockpot. they are helpful. You can make soup, stews, desserts, etc. One important key to remember is not to add a lot of liquid. My favorite recipe is one I got from the little Rival cookbook that came with my first crockpot.
No Peek Beef 1-2 lbs of beef( stew meat)cut into cubes 1 can of mushrooms or fresh ones 1 pkg dry beefy onion soup mix 1 can cream of mushroom 1/2 can of any red wine Slow cook for 8-10 hours..serve over egg noodles
You can stick chicken parts in some broth and add mini carrots, 1 medium onion chopped, some potatoes,place veggie on bottom underneath the chicken. Toss in some spices too.
Go for it, there are so many things you can make in the crock. I use to prepare stuff the night before then put them in the crock before work.
What I do: Stuff a whole chicken in the crock pot, dump on some Mrs. Dash, cram some baby carrots and baby red potatoes around the bird, fill up remaining space with water, turn on crock pot and go to work. When you get back, there is dinner. All there is to do the night before is to scrub the potatoes clean. Buy baby carrots in a bag, no prep needed.
My housemates used to make turkey chili in a crock pot. You saute the ground chili with chopped onions and garlic, put in chopped up canned tomatoes, beans and spices and let them cook.
* 3/4 c. brown sugar * 1/2 c. ketchup * 1 T. vinegar * 1 T. mustard * 1/2 t salt * 4 cans pork & beans * 2 cans kidney beans, drained & rinsed * 2 cans lima beans, drained (can substitute other beans - I usually use 1 can garbanzos, and 1 can of whatever strikes our fancy - butter beans and black-eyed peas have been the most recent substitutions)
Combine all in the crockpot, cook on low for 10+ hours.
To make vegan:
* Replace the hamburger with Morningstar Farms Crumbles (or some other vegan browned hamburger equivalent * Replace the bacon with 1-2 T. of Red Miso * Use a vegetarian baked bean
