Barbecued Pork Ribs

this recipe is a combination of a couple of online recipes, my own homemade barbeque sauce, and some tips i've picked up here:) also the pork ribs were on sale:P it seems to be a pretty adaptable recipe, and you should be able to add more or less ingredients dependent on your crock size. i was trying to use my new small crock (maybe 1.5 liters?) I did a very similar recipe for country ribs this summer- apples and onions and packed the ribs with chili powder and paprika and cumin and brown sugar.

Then I poured tequila over the whole mess and let it all cook all day, finished them on the grill with bbq sauce. Mmmm now I'm hungry.

Finishing on the grill helps tighten them up so they don't completely fall apart.

When i smoke ribs, I do the 3-2-1 method (which will be tweaked a little this year, I think):

-3 hours in the smoke.
-2 hours in a foil pack, in the smoker, no smoke of course (I just use a disposable foil tray)
-1 hour in the smoker without smoke.

The foil pack essentially braises the meat, and helps it cook quicker, and the last hour tightens the meat back up so you can handle the ribs without them falling apart.

hey im going to make your bbq sauce and ribs this week, just curious what are the amounts of the ingredients in the sauce? or is it just to taste?

gosh i've just sorta made it forever without measuring. but i'll give it a shot for ya:) i'm guessing probably about 1 1/2 cups ketchup, 3 good dashes Worcestershire, maybe 1-2 tbls butter (i used to use half a stick!!!), 2 tbls vinegar, and 1/4 cup brown sugar. these are so not accurate...let it simmer on low so all your ingredients meld, then taste (the best part of cooking right?), then add more sugar or vinegar depending on your tastes:)
