Could you do a little wheatgrass centerpiece and decorate it up to look like the serengheti or something (or wherever the animal is from)? Like maybe add little miniature trees and things and then stick the animal in the grass.
She says she likes the natural brown look, but I'm not sure she has her heart set on that. We could paint them. I'm mostly looking for what to put the animals in/on/around.
If those paper mache animals are cheap then I'd say go with them...
Otherwise you guys could just make them yourselves for less: 1. Dog toys come in a wide variety of animal shapes and aren't very expensive (they can be found at most $1 stores) or I'd bet that a place like a $1 store or Toys 'R' Us would have plastic figurines and then you could paper mache any of those and paint them 2. You could make the animal forms using balled up newspaper, tape, and the paper mache paste (depending on the age of your students, you could make this one of the class projects)
I know these options sound more time consuming than just buying those animals, but it would put more of a personal touch on them and since the wedding isn't until October 2012 they wouldn't have to be done overnight.
They're pretty cheap, about $5 each. I think she's pretty set on getting them. It's just what ELSE to do with the centerpieces. Just the animal alone is kind of...not enough. They need some kind of environment.
I don't have much to offer her, but props to her for an amazing idea. I would try (if she doesn't have a strict color theme), to work withing the natural colors of each animal for the centerpieces. For a rhino, I would use grays (feathers, stones, etc), for giraffes use creams and burnt orange-browns (use sands, stones, feathers, cream flowers, etc). I'm not sure how I would execute this myself, but I can visualize it in my mind.
It may be cool to do like the forest green grass (but higher than normal) with the animals hidden in it. Possibly with some cute flowers around it too.

They could look cool/minimalist if they were painted out white.
