Always, always, always brine meat going into the crockpot. If you thought your tenderloin turned out moist and juicy, you ain't seen nothing yet. :D
Also, if you want some good red beans and rice, try this recipe. I'm told it's not very "traditional New Orleans" tasting, but it's still damn good. (And if you can't get pickled pork where you are, just use pork.)
