1/2 pound mushrooms 4-5 tablespoons butter 1 large onion, very finely chopped 1 cup pearl barley salt, pepper 2-3 cups beef or chicken broth
Slice the mushroom caps and chop the stems. Heat the butter in a skillet and add the chopped onion. Cook for 3 or 4 minutes and add the mushrooms. Cook another 4 minutes, stirring occasionally. Add the barley and brown it lightly, mixing it well with the onions and mushrooms. Season to taste with salt and pepper and pour into a buttered casserole. Add enough boiling broth to cover the mixture andcome 1/2" above it. Cover the casserole tightly and bake in a 350 deg. F. oven for 25 minutes. Taste the barley for doneness. Add more broth, if necessary and continue cooking until the liquid is absorbed and the barley is tender.
Me too hun. :O( I feel like Im stuck in this BLOB of a body and Im trying to fight my way out. Only the fighting is nearly impposible to do. *sigh* We've commited ourselves to eating better now we just have to start taking walks at night or something instead of sitting in front of the tv. After Nik works all day that is easy to do yano? heh..its a no win.

Losing weight seems to become a more difficult project as a person ages (not commenting on your age... merely commenting from my own experience).

I personally can't stand coucous, it's always boring unless it's packed with cheese or some other kind of fat.
You were walking everyday for awhile there, and it seemed to make you feel good.. think about taking that back up?
