I have a *lot* of cornbread recipes, and they're all over the board with egg replacers. Most don't use any, some use Ener-G or flax, a few use applesauce (they say it makes it moister), and one uses soy flour (one tsp to 2 tbsps water).

all i really know about flax is that you're not supposed to cook it if you want to get all the nutrients it has to offer. (so don't fry it or bake it in a muffin) but i do know that some people drizzle it over salads or over oatmeal. i personally prefer the seeds or flax meal because the oil alone makes me gag, even when in food. it normally says on the bottle how much to take, but a general rule of thumb is about a tablespoon to 2 tablespoons a day. i used to just drink the oil straight followed by some citrusey juice or lemony tea to wash it down, but i find the seeds/meal much more palatable.

oh, and flax has a very short shelf life, so make sure what you have is fairly fresh. meal and oil last about 3 months in the fridge, whereas the seeds last 6-9 months.

oh shit, really? that's not very long at all ):

I bought the oil January 20th. Ugh. Well I better try to use what I can. Putting it in smoothies might be my best bet because I have one like EVERY day. It's how I get most of my fruit.

I tend to take hemp oil rather than flax, but I'll get flax when there's no hemp. I make salad dressing with it; white wine vinegar, hemp/flax oil, Dijon mustard, crushed garlic and dill/other herbs. Ratio of about 5:1 vinegar to oil with a little mustard to make it all emulsify and add flavour. I find it best to have rice and/or pasta with the salad to help soak up the oil.

I mix a tablespoon of ground flax seed into my grapenuts in the morning. It also works to add flax oil to soy yogurt.

If you don't particularly like flax seeds, you can also get omega 3's from hemp oil or nuts and walnuts.

I like ground flax in my oatmeal.

Also, I keep ground flax frozen and I've used it up to a year after buying it.
