Several months ago, I asked y'all for help as I prepared to make cupcakes for my friends' commitment ceremony. The advice I got was super helpful, so I wanted to pay it back by reporting on how it went and what I learned in the process.

beautiful!

i remember reading the package of those papers in the store and seeing that they were bragging about being the only truly stick-free cupcake papers. (haha! i wonder if they ever expected that to be a negative.)

were the cakes completely cooled by the time you had put the wrap over top? they might have steamed themselves off. it sounds like the kitchen was just moist in general, with your description of the lemon cakes.

Oh, you might be onto something. One tray was very slightly warm when we covered it (it was 1 am, and we really, really needed to get to bed), and I think that might well have been the one with the worst separation. The brown papers were definitely heavier duty than the lighter ones, and they also may have held in heat better, in addition to being extra non-stick (I don't remember that from the package, actually, but it wouldn't surprise me).

I've had this problem too, usually with chocolate cupcakes, for some reason. It happens even when I just let them cool in the cupcake tins, without touching them. I agree, they really are annoying, especially when you're making them for a client! And it always happens at one in the morning somehow.

i am generally 'over' the whole cupcake craze, and tend to be pretty cynical about food fads in general, but you really went above and beyond with this. first time in months i've exclaimed over cupcakes. excellent work!

Oh man, it would have been a disaster since I did it in such a scattered way. I shopped at seven different stores, some of them several times, and did plenty of trial and error in the kitchen. I know places around here charge $3-$4 per cupcake for regular, non-vegan ones without fancy toppings, so I expect vegan ones would be a little more.
