Baking substitution for Yoghurt?

I found an awesome looking non-vegan recipe for a green tea cake. It looks like it will be easy enough to veganise- I have egg replacer I can use for the eggs, but I'm concerned about the requirement for yoghurt.

I've never used soy yoghurt and am a bit reluctact to buy a container of it just for the use of baking once - aand... I don't know what ( Read more... )

baking with Silk soy yogurt does not compromise the integrity of the recipe. using milk to replace something like yogurt probably will though. you can buy soy yogurt in small cups like regular dairy yogurt so don't worry about ending up with extra :) if you REALLY do not want to use soy yogurt Or coconut yogurt please do not use rice yogurt; it's horrible in baked goods. you could probably mix tofu sour cream with soy milk to thin it

While I'm not sure how soy yogurt bakes in comparison to regular yogurt, they do sell individual sized soy yogurt containers. I just picked one up at Whole Foods because I'm curious how it is and don't want to commit to a whole big container.

You might be able to use blended silken tofu with some lemon juice added to replace the yogurt. I haven't tried it, but that's what I would do in your shoes.

If you already have soymilk, you can add a tsp or two of cider vinegar to a cup of soymilk. Let it sit and curdle for a few minutes. Instant soy yogurt. You won't taste the vinegar once it bakes.

I can't have the pectin in soy yogurt, so I use the Tofutti Sour Cream instead when baking.
