Bananas!!

I have a whole bunch of overripe bananas that are leftover from our fruit box at work (they were misplaced and recently found!!). I would like to make some banana bread or muffins with them so I can bring them back to the office for morning tea. I have all the basic ingredients but all the recipes I look at a very high in butter and only use 2-3 ( Read more... )

All my recipes use like one, not 6-7. I would however suggest cutting the ones you don't use up and then freezing them. You can thaw them later for lots of baked treats in the future.

Smoothies are great to make with a banana or two. My favourite cake and cookie recipes both use two bananas, and the cake uses oil, not butter. The recipes are here. The cake also makes good cupcakes, so if you have a lot of people at work (or a lot of friends, you can also freeze them), just double the recipe and make lovely blender drinks, they'll be all gone :)

i posted a recipe here, and it seems to have been well-received (my family certainly receives it well, which is to say they tend to bolt it down before i can have any). double the recipe to use 6 bananas and make two loaves! it'll do well with pretty much any alterations - for example, sometimes i want it to be more cakey so i add lots more sugar, or more healthy so i use applesauce instead of butter/oil. always tastes good.

I get a vegan cake mix (like the madagascar vanilla mix from Trader Joe's) and use bananas to replace eggs and some of the oil/butter. 2 bananas for 2 eggs. I blend it with rice milk and add the oil or butter and then bake away. They make awesome cupcakes.
