Tofu-stuffed shells

So, I'm thinking that I want to make tofu-stuffed shells for my host-family that eats A LOT of meat. I'm currently an exchange student and we are supposed to make a meal for our host familiesand I thought this was perfect since they eat a lot of pasta ( Read more... )

i completely agree with you. i probably use more than 1/2 tsp of nutmeg, and i usually add some parsley as well. ricotta cheese, however doesn't have much taste, so the consistency is really what needs to "fool" omnis. i don't have a food processor either, so i just crumble it as well. :B

i love tofu-basil ricotti with or without the nut. yeast. (block tofu, 1-2 cloves garlic, tbsp of basil, maybe a pinch more, lil olive oil, lil lemon juice.... sometimes i add oregano but it's not usually necessary when tomato sauce is involved.) i dunno, i am of the mindset that if you smother something tasty like pasta and tofu ricotta in tasty tomato sauce, everyone loves it. and the two omnis in my house tend to agree and have asked for repeats of lasagna and shells made with this.

i guess if people are expecting something with flavor explosions beyond the typical italian fare, i have no suggestions, but just stuffed shells have always been a hit in my experience.

when i make stuffed shells i like to add a bit of soymilk to help with the texture and i also sprinkle sugar in it...i don't know why, sugar just makes it taste really good to me and i don't even add all that much.

how has your host family reacted to your veganism and do you speak portuguese cause I feel like that would make it easier?

I'm not vegan at the moment unfortuantly : ( only vegetarian but I've been vegetarian for almost three years and have been the whole time here. My host mom cooks and I really don't get the opportunity too because brazilian kids do NOTHING to help out so she thinks that I can't do anything either(I made boxed macoroni once and she was amazed that I could make it lmao). I'm going home in about four months and am going to start my veganism then : ) There are no options for vegans here and no healthy vegetarian options besides salad and eating salad every day for every meal isnt healthy so yah : (

oh awesome
i was asking because my boyfriend and i went to portugal this summer (he's portuguese) but we stayed in his house there and his mom cooked everynight, his family already knew we were vegan and were prepared with everything

but i'm sure brazil is completely different

Do you know for sure you can get pasta shells there? I know that I saw them for the first time when I was in the USA, and haven't found them here since I came back (I'm Australian). We only have the little shells, not the stuffing kind. That's definitely something to check.

I was actually thinking of making it from scratch myself and if I can't or cannot find shells then I'm thinking of making an alternative out of eggplant which sounds amazing

Are you sure?

I'm Australian and I remember my mum making "stuffed shells" when I was a kid (she called them "canneloni" though). Although, I've never tried to make them so I can't really vouch for their availability.

Maybe if you try an Italian specialist store?

As far as I know, canneloni is large tubes of pasta, stuffed with ricotta/mozzarella/spinach (whatever), covered in a tomato based sauce, with cheese on top, baked in the oven.

Stuffed shells is basically the same, but made with jumbo shells (like sea-shell shaped) and without the cheese on top of the whole dish.

It's quite American I think - I don't know that I'd find those shells in an Italian shop. I could be wrong though. Know any good Italian specialty shops in Brisbane? lol.
