Do you know for sure you can get pasta shells there? I know that I saw them for the first time when I was in the USA, and haven't found them here since I came back (I'm Australian). We only have the little shells, not the stuffing kind. That's definitely something to check.

I was actually thinking of making it from scratch myself and if I can't or cannot find shells then I'm thinking of making an alternative out of eggplant which sounds amazing

Are you sure?

I'm Australian and I remember my mum making "stuffed shells" when I was a kid (she called them "canneloni" though). Although, I've never tried to make them so I can't really vouch for their availability.

Maybe if you try an Italian specialist store?

Are you sure they were shells?

As far as I know, canneloni is large tubes of pasta, stuffed with ricotta/mozzarella/spinach (whatever), covered in a tomato based sauce, with cheese on top, baked in the oven.

Stuffed shells is basically the same, but made with jumbo shells (like sea-shell shaped) and without the cheese on top of the whole dish.

It's quite American I think - I don't know that I'd find those shells in an Italian shop. I could be wrong though. Know any good Italian specialty shops in Brisbane? lol.

OHHHHhhh... oops, lol. All this time I thought Americans just called the tubes "shells"! Probably 'cause that's the only kind of stuffed pasta I'd ever known of.

I just did a bit of brief Googling - there's a review of Brisbane providores here, the following two look like possibilities:

3/ Pennisi Distributors 17 Balaclava St, Woolloongabba. This huge deli wholesaler again is family run business with Catarina at the helm. Pennisi has a fabulous range of local and imported cheeses @ good prices. This is the Italian convenience deli of Brisbane! It has the ingredients to make the best mouth-watering antipasto. Fill a basket, grab a bottle of wine and you are set for the day or a week if you choose ( ... )
