zucchini for veggie-phobes

Sparing you the details, my family has somehow acquired a veritable pantload of enormous zucchini, and I'm expected to do something that will make them taste good to everyone--mind you, I'm not too fond if it myself. I've collected a few recipes from this community that I want to try, but really what I'm wondering about is a zucchini cake. Does ( Read more... )

My favorite way to eat zucchini is as crispy zucchini fritte which is breaded and fried (mmmm, not so much on the healthy).

I also add it to sauce for over spaghetti or in a stir fry with either soy sauce, sweet soy sauce or sweet and sour sauce.

I know there are recipes for zucchini bread and muffins around. I just don't usually like them much.

I don't have a zucchini bread recipe, but there's a good tip for "sneaking" it into recipes. If you grate it (either using a regular grater or using a food processor), you can sneak zucchini in lots of things-- stews, chili, casseroles, pasta sauces and all sorts of things without much zucchini flavor but adding some nutrients and bulk to the dish. I'd add it late in the cooking process since it's already pretty soft and that way you're not killing all of its nutritional value. My ex hated zucchini and has no idea just how much he consumed ;) He frequently raved about stuff completely loaded with it.

I've made pasta sauce before by roasting a few tomatoes, a few red peppers, and a few zucchini and then blending them all in a food processor with some veggie broth. Nobody will ever know!!

And I second the chocolate zucchini cake.
