has anyone ever made chocolate-peppermint cupcakes? i usually use this recipe as cupcakes, and i wonder if i could just replace the vanilla with peppermint extract, or just add in a teaspoon or so to the mix. i've never used peppermint extract so i'm not sure how strong it is or how much to use, or if i should just skip it in the cupcakes ( Read more... )

suggests 1/2 tsp of peppermint extract for cupcakes made from a box mix, so maybe try that? They sound great. If you were going to make vanilla frosting, you could add mint extract to that, too, or just sprinkle the frosting with crushed peppermint candy or those little mini Andes mint chocolate chip things?

I think peppermint and cinnamon are alot stronger than vanilla, so I would use less peppermint in your cupcakes than it calls for with vanilla.

You can either put the peppermint in the cupcakes or the frosting. I think it would taste fab if it was just in the frosting. I'm not a cupcake expert or anything, though. I just eat them alot.

I've made chocolate-mint cupcakes from a very similar recipe. Try 1/2 tsp vanilla, 1/2 tsp mint.
