has anyone ever made chocolate-peppermint cupcakes? i usually use this recipe as cupcakes, and i wonder if i could just replace the vanilla with peppermint extract, or just add in a teaspoon or so to the mix. i've never used peppermint extract so i'm not sure how strong it is or how much to use, or if i should just skip it in the cupcakes ( Read more... )

How about chocolate cuppy cakes with peppermint icing?
you can just keep adding peppermint to the icing until it's good.

also, BUY GOOD MINT EXTRACT!! Seriously, the mcormick stuff you find in the supermarket just makes things taste like toothpaste. I bought better stuff that was about 4 dollars fom my local co-op (can't remember the name and the stuff is at my boyfriends) and the difference was astounding.
For my b-day I made a mint chocolate chip cake (one of 4 cakes I made cuz i'm crazy). The cake itself was a basic white cake, and I added in both the vanilla and the mint extract (vanilla is never a bad idea). I think i added in 4 teaspoons of vanilla, and 1 teaspoon of mint. However, if your worried this is too strong add in a half teaspoon taste the batter, and then add a half teaspoon more. I then coated a cup of chocolate chips with a dusting of flour (aparently keeps them from sinking to the bottom, i didn't eat enough of the cake sober to see if this was true or not) and mixed those through. Made a chocomint "butter"cream filling, and frosted with plain "butter" cream.
Yummy!

oh, also, liberal amounts of green food coloring, the wilton stuff, is a nesacity when making mint cake. Who wants white mint chocolate chip anything, heh, or atleast my childhood side says so...
