has anyone ever made chocolate-peppermint cupcakes? i usually use
this recipe as cupcakes, and i wonder if i could just replace the vanilla with peppermint extract, or just add in a teaspoon or so to the mix. i've never used peppermint extract so i'm not sure how strong it is or how much to use, or if i should just skip it in the cupcakes

you can just keep adding peppermint to the icing until it's good.

For my b-day I made a mint chocolate chip cake (one of 4 cakes I made cuz i'm crazy). The cake itself was a basic white cake, and I added in both the vanilla and the mint extract (vanilla is never a bad idea). I think i added in 4 teaspoons of vanilla, and 1 teaspoon of mint. However, if your worried this is too strong add in a half teaspoon taste the batter, and then add a half teaspoon more. I then coated a cup of chocolate chips with a dusting of flour (aparently keeps them from sinking to the bottom, i didn't eat enough of the cake sober to see if this was true or not) and mixed those through. Made a chocomint "butter"cream filling, and frosted with plain "butter" cream.
