tofurkey is super gross, and I am also not a huge fan of their other products. One year i made the herbed baked tofu from how it all vegan and that was muuuuch better than the tofurkey (though I wouldn't nesacarily make it again). If your planning this far in advance i would plan something new and awsome myself :)

Last year I had a vegan thanksgiving, and surprisingly I had more food than ever before.
I ate all of the regular fixings I suppose (made some mashed potatoes, corn, stuffing, squash, different kinds of veggies, hain's vegetarian gravy, cranberry sauce) and then one of Amy's Vegetable Pot-Pies. I really like those, some people don't (so I've heard) but I like it a lot. It's kind of thanksgivingy in my opinion, it tastes like turkey and gravey, with potatoes and veggies inside.

not sure, but i know this will be making an appearance: sweet potatoes stuffed with cranberries, pears, and pecans

(from epicurious.com, not a vegan recipe but it's an easy sub to sautée your pears in oil or margarine instead of butter...)

I tried tofurky one year, cooked according to package directions. It was pretty gnarly. Never again. I usually just do random side-type stuff, like mashed potatoes, stuffing, veggies, whatever, while my carnivorous family gnaws away at the turkey.

I don't usually use any substitute turkey... just taking one look at tofurky turned me off of the stuff forever. A good rice and lentil dish will do just as well for a main course... or just load up on mashed potatoes! Also, some companies do make a vegan brown gravy that is pretty good.
