Best wrap ever is my hummus, tomatoes, onions, and sprouts. My hummus recipe is here, and wraps are good with my baba ganouj, too:
Baba Ganouj
1 large or two small eggplants
Juice of 1/2 lemon
1/4 cup or more tahini, to taste
1-3 cloves garlic, to taste
salt to taste
Cut the stem off the eggplant. Prick it with a fork all over and bake it
in the oven for about an hour at 400F (shorter time for smaller eggplants), until the skin starts to char. Take it out and cool it until it's cool enough to handle (or use kevlar gloves or something). Cut it in half and scoop the flesh into a blender container. Add remaining ingredients and blend (or use food processor) until smooth, but not runny. Chill before serving. Or don't. Hell, who am I to tell you not to eat warm eggplant dip? :-)

Drain and rinse canned black beans. Add:
chopped tomatoes (I usually use cherry)
frozen corn (thaw first if you're going to eat it immediately)
chopped scallions (the while parts)
basil (chopped fresh or a sprinkle of dried)
Drizzle the whole thing with olive oil and vinegar (red and white wine are both good -- balsamic is a bit much) and toss to coat.
