Just had lunch--leftovers from dinner last night (I always make extra so we all have lunches the next day). Last night's dinner was turkey Bolognese, made with the last of the turkey from Monday's Thanksgiving dinner (just under the 3-4 day max time in fridge). I always find myself eating more of whatever, this time of year; extra calories for winter, i think it's unavoidable.

Same here, I eat more, yet with the cold weather I also exercise less and sleep more. Fatal combination., sigh.

Do you add the white wine at the beginning or end of cooking the turkey leftover dish?

For this dish it was in the middle, but closer to the end. After adding all the liquids I reduced the sauce by about 1/3 to 1/2.
