Just had lunch--leftovers from dinner last night (I always make extra so we all have lunches the next day). Last night's dinner was turkey Bolognese, made with the last of the turkey from Monday's Thanksgiving dinner (just under the 3-4 day max time in fridge). Rigatoni, tomatoes, fennel, onions, carrrots, celery, garlic, bay leaves, white wine. So, so good! Usually I make curry with the leftover meat, but I wasn't feeling it this time. Maybe there is such thing as too much curry.
I've been eating a lot of meat lately. Normally I am quasi-vegetarian. But recently I've been too tired to make two different meals every day. My family can handle eating non-meat-centric meals once or twice a week, but any more and they get pouty. My husband literally (I mean literally) doesn't know how to cook, so I don't know what he's going to do starting next month. Lots of processed stuff I imagine. Or he could maybe finally learn.
Have a work meeting to dial in to now.
