As things get busier in the kitchen, life outside gets to be more sedate. My days off are relegated to sleep, laundry and going around NYC with no real agenda except a stop at the gym and a drink at the end of the night. My bones ache from another 13 hour shift, tons of prep will require me to be there mad early tomorrow, feeling a bit shaky because Chef has decided to be harder on me than he ever was before. So I dont remember my last update, but its been a busy time lately. Mas is doing well, and imagine a fine dining establishment that has 12 tables and 32 seats doing 105 meals. Whats new this week? Not too much other than Mas had the best week since we opened. 60 hours goes by fast and its good to be so busy and working so much. Got my first compliment from Chef since I started there, said our first seating was really good, smooth as silk were his words ( Read more... )

Life in the kitchen is exciting, its tough sometimes but I do love it. I work about 60 hours a week now at Mas (farmhouse) and its really going well. We did 98 covers on saturday night, which is a lot for a place that has 12 tables and 32 seats in the whole joint.
