Whats new this week? Not too much other than Mas had the best week since we opened. 60 hours goes by fast and its good to be so busy and working so much. Got my first compliment from Chef since I started there, said our first seating was really good, smooth as silk were his words.
Felt good to hear, I am not one of those people who die for approval, but its always nice to hear you are doing a good job. I love being on garde manger, even though one other person is on my station every latenight shift, I still treat it as my station and my world. Keeping it clean is something I am starting to really enjoy and take lots of pride in doing. The smell of bleach water stays on my hands until I get home each night, and its a constant reminder to keep cleaning as I go throughout the busy night.
Valentines day was a huge hit. Busy as hell and the fried kumomoto oysters with bacon cream sauce and spinach was a huge hit. Love that stuff. The new veal dish with turnips and carrots in a mushroom daube is divine too. Loving the razor clam chowder with sherry wine.
We are also using trumpet royale mushrooms for our parmesan sablee instead of porcinis. Change is good. They are so much meatier than porcinis. Yum
Ive been doing well with not smoking, but my chest hurts today and I am a bit stuffed up. Gonna hit the gym tomorrow and enjoy my day off. Went to see the gates today in Central park and it was badass...really cool stuff indeed. After that was noodles at Momofuku, great ramen with a poached egg and berkshire pork belly. The steamed buns were divine too. Great to see the parents who are both doing lots better. Apparently spending lots of money on Laywers to prep for a nasty divorce can lead to saving a marriage.
Who knew? Regardless it was nice to see them again, was a great time.
Did dinner for J this thursday, was roasted chicken with a hankerchief pasta napoleon filled with carmelized onions and cumin tomatoes. Baby spinach salad with a tangerine/red onion dressing.
Ok, time for bed. Got some sleep to catch up on.
I also want to get the 10th anniversary addition of Heat. That movie rocks.
