Low Iodine Diet Week 2 commences

Actually I have a fair amount of hope about this week despite a frustrating weekend of failing to make decent spaghetti sauce. It's very soupy. I used the wrong tomatoes. Oh well, chalk it up to a learning experience and pack it full of meat. At least, that's my plan for it ( Read more... )

Sorry it is sucking in the kitchen. This is my personal 'Ok, never f****** mind' notice when even cooking sucks. It means I am just at the limit. I can't have tomatoes at all, so imagine making a passable red sauce with NO tomatoes! See, now you should feel better?

Mine does have beets ...but has carrots, red wine, beef broth and sloe gin as the main ingredients.

Oh that sauce sounds YUM! I'll have to try it when I'm allowed butter again, and canned tomatoes also. Although not using tomatoes right now would just about kill me. I can't wait for this damned diet to be over.

I used regular tomatoes - those on a vine. And ended up with stewed tomatoes, which will probably taste fine but were NOT what I was going for AT ALL.

See, that part there - the strain it part? Somehow I missed that bit of instruction so I just dumped the entire sliced up tomato into the crock pot with basil, garlic and olive oil. And after I added the meat last night, it was really tasty. Just.. not spaghetti sauce.

Luckily, my boss cooked me dinner for tonight because clearly thinking isn't one of my skill sets right now.
